Two Months of Carry Out, Cooking + Baking

Here's another edition of what I've been eating lately, in case you wondered!😊 Much of this is on my Instagram page too!

As an essential employee, I don't always feel like cooking. I've been getting carry out about once a week, and it usually gives me an extra meal or two of leftovers. (I don't understand people who don't eat leftovers or take their food home from a restaurant!)

Via 313 in Oak Hill had an easy pick up system. I don't discriminate against different styles of pizza, and sometimes just crave the Detroit-style thick squares. I also learned that you can request it "extra crispy" for those nice, almost burnt edges!

I found some chili (with beans!) in the freezer, and had some of Trader Joe's organic corn chips for Frito pie!

My Easter project was making lamb osso bucco, which was supposed to braise in the oven for a few hours. This was the day I discovered my oven wasn't working, but at least the stovetop was, so at least I could cook my lamb! This was delicious, and a new oven was ordered.

Phantasma Kitchen asked me to try out their food, and I was happy to oblige. A total contrast to Via 313's pie, and like I said, I don't discriminate! Loved how thin and crispy Phantasma's pizza is. Also impressed by their Cesar dressing for the salad.  Hopefully this place won't ghost us anytime soon.

Finally scratched the itch for tacos; love Papalote, but have decided their al pastor is not my personal favorite, as it doesn't seem to be made in the traditional way. The bean and cheese taco was great, as was the sope.

New GE oven in the house! Had to test it, and I tried a new focaccia recipe, the no knead one from Bon Appetit. Thumbs up!

Sichuan River is always a go to favorite of mine, both for dining in and carry out. I almost always get the eggplant in garlic sauce and add pork to it. And I get three meals from it! The dan dan noodles were good and you could definitely taste (or I should say feel the numbing effects) the sichuan peppercorns, but after the first day, the noodles had absorbed much of the liquid their texture wasn't as good. So need to eat these immediately! I was also rather enamored by the crab rangoon, which seemed exceptionally crispy, even after being transported home in a styrofoam container.

Baking project #2 in the new oven, King Arthur Flour's bacon cheddar scones. Good quality thick bacon I think makes a difference! (I used DaBecca bacon, one of Costco's best kept secrets; also I didn't have chives but I didn't really miss them in this recipe.)

The mole enchiladas from Curra's TOTALLY hit the spot! Lightly sweet, savory, with a bit of spiciness. And I took a chance on something I hadn't tried from them before, lamb empanadas, and I will definitely order these again too! Also really liked the chipotle sauce that was with them.

I met my friend Mad Betty up at Le Bleu for a socially distant lunch. We both ordered online and coordinated the pick up times, and then we parked our cars and ate and talked from them! And the banh mi and summer spring rolls with sausage were both fantastic! They also have contactless pick-up mastered perfectly.

And finally, last night I had friends from New Mexico passing through town, so we decided to meet up at Terry Black's BBQ for dinner. This was my first meal inside a restaurant in two months, as restaurants have just re-opened at 25% capacity. The staff was great about keeping people socially distant while in line for food, and tables were appropriately spaced apart. And this Texas trinity did not disappoint -- pork ribs, brisket, and sausage, and yes, I have leftovers!

I should wrap this up by saying I started intermittent fasting on March 1st (after eating my way through San Francisco!), and I've lost 13 pounds!  What favorite things have you been eating (either making or ordering?!) these past few months?

Huge thanks to @eatdrinkanthem for having me out last night to sample their menu. I was not monetarily compensated and all opinions are my own. Think Asia/Polynesia meets Texas and you'll have an idea of the diverse cuisine. Loved the fully loaded sweet potato fries, which I was shocked at how crispy they were for sweet potato! Would so eat these again and I actually really want to try their smoked tofu dish! Other dishes pictured: cocktails, raw oysters, tiki taquitos with kim chee, popcorn chicken + bubble waffle w white showy gravy, tempura cauliflower w Thai green goddess dressing, border salad and the Upside Down Pineapple Bread Pudding. Have to say all the fried stuff was exceptionally well fried, crispy and not greasy. Our server was excellent too. Rainey Street isn't my scene but it was a fun night out & glad we used @lyft! Big thanks to @modernmarket for setting me up with rewards points on their app! 🤗 It's a very useful app with a built-in QR code which you use to pay. No having to keep track of a separate gift card. 👍 (They also did not ask me for a post, just for my consideration.) I got take out once and then met @madbettyatx for a lunch date this week. Loved the cucumber lemonade and the bacon, corn & basil pizza. 🍕 Farmer's salad 🥗 was large and had chicken, avocado🥑, strawberries🍓 and cotija cheese. I will say both times, the grains have been mushy in the bowls but this Buddha bowl with tofu was only $8. It is fresh, affordable food, no hormones or additives, and also very budget friendly for what you are getting! Home Cooking: Slow Cooker Pulled Pork

I am a relative newcomer to crock pot/slow cooker cooking. My mother didn't use a cooker when I was growing up, and it's only been in the last 5 - 7 years that I bought myself one. But I definitely appreciate the time advantages to using one, and actually now I have two: a big six quart one and a baby two quart. They are both REAL handy!

My friend Sharon Chen of Delish Plan has written a slow cooker cookbook. There are a lot of creative recipes from meats to vegetarian dishes to dessert.  And one of the beautiful things about using a slow cooker, it doesn't heat up your entire kitchen the way an oven does in the Texas summer! But back to pulled pork!

I bought a small pork shoulder from Whole Foods, that was about a pound and a half; I decided to make half the recipe and use my smaller cooker. While Sharon advocates for using plastic liners for ease of clean up, I don't care to cook in plastic, so I sprayed the cooker well with non-stick spray. An onion, the meat, and a mixture of ketchup, hard cider (I used Crabbie's, which is more of an alcoholic ginger beer than hard apple cider, but the flavors lent well), Dijon mustard, brown sugar, salt + pepper, bay leaf, and chile garlic paste all went in the pot. I cranked the heat all the way to low and let it work it's magic overnight.  My house smelled good in the morning! Here's what it all looked like still in the pot.

And below, with minimal shredding, you can see how the meat just fell off the bone.  One thing I did though was to reduce the remaining liquid from the pot; I poured it all into a skillet and let it simmer for about 20 minutes. It reduced somewhat, but definitely thickened.

One night for dinner, I made some polenta and brussels and had an easy meal, adding some of the reduced juices.

And this was my favorite, the pulled pork with a great pasta, goat cheese, fresh basil and some of that reduction.

Without a doubt, I would make this pulled pork recipe again! In addition to what I made, there's so much you can do with the pork, like make tacos or pulled pork sandwiches. Easy and versatile. I can happily recommend Delish Plan's cookbook!

Soba Noodles with Broccoli Slaw

I hosted a pot luck lunch recently with five former coworkers. We've known each other about 20 years now, but it's been almost two years since we all got together. Time flies. Life happens. Seasons change. But we can all still connect like no time has passed at all. :)

Here's an easy soba noodle recipe that my friends enjoyed. While I haven't run an actual nutritional profile on it, it's pretty dang healthy, and you could add some protein too.

Soba Noodles with Broccoli Slaw

10 oz soba noodles (whole wheat spaghetti works too)
12 oz bag broccoli slaw
2 medium cloves garlic, center stalk removed (that's where the bitter garlic taste is)
½ inch knob of fresh ginger, peeled
½ cup soy sauce (I prefer a higher quality soy sauce that has better flavor over a low sodium one, but entirely up to you)
¼ cup brown sugar
2 Tbls. tahini
1 Tbls. toasted sesame oil
2 Tbls. rice vinegar
Optional 1: chile paste or flakes to taste
Optional 2: 1 - 2 Tbls. sliced scallions or chopped peanuts; ½ tsp. sesame seeds


  • Cook noodles to package directions; drain,  rinse under cold water and drain thoroughly. Place in large bowl
  • Cook slaw to package, either via microwave (about 3 minutes) or blanching (about 2 minutes); drain and rinse under cold water.
  • While noodles cook, prepare the sauce; in a small food processor add remaining ingredients and combine. Taste it! Add more of something if you wish!
  • Toss sauce over noodle and combine well. Let refrigerate for at least an hour.
  • Add protein of choice if desired (grilled chicken, baked or fried tofu, etc.
  • Serves 4 - 6

Like many dishes, it tastes better a few hours after it's been assembled. Also great for picnics/outdoor events because there's no mayo/eggs.
